When I returned home from my backpacking trip across Europe, there was one food I was really craving. Avocados! π₯
Avocados are packed with powerful antioxidants, and are a great source of vitamins A, C, E and K, as well as B vitamins (including Folate). Theyβre also high in magnesium and potassium, and are a magnificent source of healthy fats!
The micronutrients in avocados work to decrease free radical damage and inflammation in the body, and improve eye, skin and joint health, as well as brain function and immune function.
They also aid the absorption of fat-soluble vitamins into the body, and assist with normal growth and repair.
Today, Iβm sharing my easy vegan guacamole recipe, which combines the creaminess of avocado with the sweet bite of red onion, and the fruity flavours of fresh apricots!
This guacamole can be used as a dip for raw veggies, spread on top of whole grain toast, or eaten with your favourite Mexican dish!

- 2 Avocados (approximately 100g each)
- 2 Apricots (approximately 40g each)
- 1 Small Red Onion (approximately 40g)
- 4 Tsp Lemon Juice
- 4 Tsp Fresh Coriander Leaf (Cilantro), Diced.
- 1/2 Tsp Garlic Granules
- A Dash of Salt to Taste!
- Using the back of a fork, mash the avocados with the lemon juice, garlic granules, coriander and salt.
- Finely dice the apricots and red onion, and add them into the avocado mix, stirring thoroughly.
- Garnish with more coriander and serve.
- Recipe makes approx. 300g of Guacamole!
This isn’t a dish I would typically eat, but man, you’ve made it look super pretty!!

While I grew up in California,avocados was the one food I never learned to like. I might pass on this dish but I will pin it and share it for my friends who do like them…

I love this picture it’s beautiful, I want that bowl (where did you get it?) I am not really the biggest fan of Guacamole, however this recipe seems unique and something I’d give a try! π x

Though I am not vegan, that guacamole recipe sure looks delish and would definitely try one. Avocados are seriously good and mixing apricots with it too, yummy!

This looks absolutely scrumptious! I would never think to put apricots in guacamole, but I bet it gives a new fresh flavour to an old favourite. Certainly the colours are appetising and makes me want to have Chili with all the trimmings for tea!

I love avocados and this sounds delish, definitely like something I would make. Can I ask, do you think it would work well with dried apricots instead? I just wondered, because I have plenty of them and it sounds like a great way to use them up.
Ohh! I’ve never made it with dried ones before, but I’m sure it’d work! π If they’re the super dried-out ones, you could maybe soak them in a little warm water first, to make them a little softer! I’d love to know how it turns out! <3 xxx
